Fenugreek is an annual plant; a species of the genus Fenugreek in the Legume family (subfamily Moth).

Fenugreek is actively used in various cuisines of the world to give the dish a nutty or mushroom flavor. Fenugreek seeds are part of such famous condiments as Georgian "Khmeli-Suneli", Indian "Curry", Armenian "Chaman" for cooking Basturma. Also, ground Shambala is used as a thickener for purees and sauces, due to its high starch content. To remove the slight bitterness inherent in fenugreek, and better reveal the flavor of the spice, it is recommended to heat the seeds in a dry pan before grinding.
